Add the Oreos to a food processor and pulse until they’re crushed.
Add the cream cheese and process until the mixture is smooth and creamy, stopping to scrape down the sides of the bowl if necessary.
Transfer the mixture to a bowl. Lay a piece of plastic wrap directly on top. Chill until the mixture is easy to scoop, about 15 minutes in the freezer or 1 hour in the fridge.
Scoop the mixture into 1-tablespoon sized balls and pop them in the freezer to chill for about 10 minutes while you melt the candy melts.
Melt the candy melts in a double boiler or in a microwave-safe bowl in the microwave.
Dip each Oreo ball in the melted candy to coat. Place the truffles on a wax paper-lined tray. Drizzle a little more of the melted candy decoratively on top. Top with sprinkles before the candy sets.
Let the candy coating set before serving.
