For my fellow Disney fans, this fruity, refreshing Pineapple Dole Whip recipe is for you. We make it with a base of frozen pineapple, coconut milk, and natural sweetener for a treat that's better for you than most - and much healthier than what you'll find in the parks - without sacrificing flavor or creamy texture!
Add the coconut milk, honey, vanilla, and salt to a blender and pulse a couple times to combine.
Add the frozen pineapples chunks to the blender, and process until smooth and creamy, tamping down as necessary. Be careful not to over-process or the mixture will turn into a smoothie consistency instead of soft-serve consistency.
Once blended, transfer the mixture to a gallon-sized plastic bag or a pastry piping bag (fitted with a large tip) and freeze 15 minutes.
If using a plastic bag, cut off one corner of the bag. Squeeze the dole whip into 2 glasses. Serve immediately.
