These decadent Butterbeer Rice Krispies Treats have a rich butterscotch vanilla flavor and are deliciously gooey and easy to make! They're fun for a Halloween party, a Harry Potter themed party, or just because you’re in the mood for really great marshmallow-y rice krispies treat.
Who else is a Harry Potter fan? You’re in good company because I am too! Every October re-watching this classic series is high on my priority list.
And then of course I’m in the mood to make something butterbeer flavored! If you’re not familiar with it, the best way I can describe the flavor of butterbeer is butterscotch vanilla. It’s quite sweet and rich due to butterscotch, and vanilla helps to round it out and add depth. It’s delicious.
These pretty Butterbeer Rice Krispies Treats are decadent and gooey with just the right amount of sweetness and a hint of butterscotch vanilla flavor. I added soft caramels because they pair well with butterscotch, and they’re fun and whimsical topped with gold and white sprinkles.
Of course you can buy special Harry Potter themed sprinkles too!
Go ahead and whip up a batch for Halloween or a Harry Potter themed party. Or just because it’s a random Tuesday night.

The Best Butterbeer Rice Krispies Treats Recipe
Ingredients in Vanilla Butterscotch Rice Krispies Treats
- Butter
- Mini marshmallows
- Vanilla extract
- Butterscotch extract
- Salt
- Rice Krispies cereal
- Soft caramels
- Gold + white sprinkles
How to Make Rice Krispies Treats
- Add the butter to a medium saucepan over medium heat.
- Once it starts to melt, add the marshmallows.
- Cook until they’re about 3/4 of the way melted, stirring occasionally.
- Remove from the heat and stir in the flavorings (such as vanilla extract).
- Pour the Rice Krispies cereal into a large bowl. Pour the marshmallow mixture on top.
- Stir to combine, and then stir in any mix-ins the recipe calls for (here, chopped soft caramels).
- Line an 8 by 8-inch baking dish with 2 pieces of parchment paper so it hangs over all 4 sides. Lightly spray the inside with coconut oil spray.
- Transfer the mixture to the prepared baking dish and use an oiled metal spatula to spread it out evenly. Top with sprinkles if desired. Cool completely before cutting with an oiled knife.
Variations on This Recipe
- Play with the flavorings. For a more classic flavor profile, omit the butterscotch extract and bump up the vanilla to 1 teaspoon. Or use any combination of extracts that you like, such as hazelnut + caramel or strawberry + peanut butter.
- Use different add-ins. If desired, skip the soft caramels and instead add butterscotch chips.
- Make it fancy with chocolate. Once you cut the treats into squares, drizzle a little melted chocolate on top, or dip the bottoms in melted chocolate. After they’re drizzled or dipped, place the rice krispies treats onto a tray lined with wax paper and let the chocolate set before serving.

Store rice krispies treats in an airtight container at room temperature for up to 5 days.
Tips for Making Butterscotch Rice Krispies Treats
- Salted butter. If you don’t have unsalted butter, you can use salted butter and omit the 1/8 teaspoon salt.
- Don’t fully melt the marshmallows. When the marshmallows are about 3/4 of the way melted, remove them from the heat and stir in the flavorings. This will help make sure they’re super gooey!
- To get perfect squares. Make sure to let them fully cool before cutting.

Will Rice Krispies Treats Go Bad?
It takes a while, but yes, they can eventually go bad. Before they go bad, rice krispies treats are more likely to get stale.
To help keep them fresh, you can cut them into squares, wrap each square in plastic wrap, and store them in an airtight container at room temperature.
Why Did My Rice Krispies Treats Come Out Hard?
There are a few different reasons why this could happen:
- The marshmallows were stale.
- Or the marshmallows were overcooked (make sure to remove them from the heat when they’re 3/4 melted).
- Alternatively, adding too much Rice Krispies cereal will throw off the ratios and may cause them to be hard. Be sure to measure carefully!

There are 2 tricks to getting nice neat squares:
- Make sure they’re completely cooled before you cut them.
- Use an oiled knife to cut them with.
