Variations on This Recipe
- No vanilla bean paste. I love the little flecks of vanilla bean and the depth of flavor it adds, but if you don’t have vanilla bean paste, you can double the amount of vanilla extract.
- Make it lemon. If you like lemon cake, add 1 teaspoon fresh lemon zest.
- Spice it up. Cinnamon is also a delicious addition! Add up to 1/2 teaspoon of ground cinnamon.
- Frost it if you want. There’s really no need (because this cake is super moist!), but if you have frosting on hand or feel like whipping it up, go ahead and frost this.
Tips for Making a Microwave Vanilla Mug Cake
- To prevent the mug cake from spilling over as it microwaves, I find it helpful to open and close the microwave door once about halfway through.
- Try not to over-mix the batter because doing so can cause a rubbery mug cake.
- Like most mug cakes, this is best enjoyed the same day it’s made.

What is the Difference Between a Mug Cake and a Cake?
There are 2 main differences between a traditional cake and a mug cake:
- A mug cake is scaled way down to have the entire amount of batter fit into a coffee mug.
- A traditional cake is typically baked in the oven, and a mug cake is cooked in the microwave.
How Can I Tell if a Mug is Microwave Safe?
There is a simple method to test if a mug is microwave safe:
- Fill a mug 3/4 full with water.
- Microwave the mug of water on HIGH for 1 minute.
- If the mug is cool but the water is hot, it is microwave safe. If the mug is warm or hot, it isn’t microwave safe.

just right as I was about to start work I got and intense and undeniable craving for something sweet and then I stumbled upon this quick vanilla mug cake and although I didn’t have everything I needed (aka the vanilla bean paste) I got to work (btw I used 3/4 tsp vanilla extract in place of my vanilla paste absence! Making this though turned out to be no work at all, it was so quick and simple to make yet one of the most delicious much cakes I’ve ever had, let me rephrase that, the most delicious, and here’s why, this much cake after 1 and 45 secs in the microwave was so fluffy and moist yet ‘baked’ (I use that term loosely because how fast it was done was verging on magical) to perfection without a single gooey or overcooked spot, and I mention this because in the past when I’ve made mug cakes from other websites and such they’ve all had either a gooey bottom or and overcooked top, but this mug cake, was EXCELLENT through and through, it was exactly what I needed and more and I swear it tasted just like a sugar cookie. It was amazing and I’m gonna be making another one tonight lol!! I will be recommending and sharing on socials with my friends after work cuz this is too good not to share!
